For this first harvest, production has been limited with a yield of less than 3,000kg\/Ha. Both varieties were harvested manually with 12kg boxes on September 1st, with optimal ripening and health status. <\/p>\n

Fermentations were carried out for 16 days in stainless steel tanks at low temperature and maceration with controlled pumping over to preserve the primary varietal aromas. Malolactic fermentation was carried out and a third of the wine was aged in 2nd year French oak barrels. The wine was clarified and filtered on March 15 before bottling. <\/p>\n
